Abstract

Karanda (Carissa carandas L.), also known as "Nam Daeng" in Thai, is a plant that contains important compounds such as phenolic acids and vitamin C. It also exhibits pharmacological activities, particularly antioxidant properties, making it a promising medicinal herb for the development of treatments for various diseases. This study aimed to determine the optimal ratio of ethanol and distilled water as solvents for extracting compounds from Nam Daeng and to evaluate its antioxidant activity. The extraction was performed using different ratios of ethanol and distilled water, followed by analysis of antioxidant activity and total phenolic content. The results showed that extraction using distilled water at a 1:15 ratio yielded the highest total phenolic content and exhibited the best antioxidant activity. Future studies should further investigate other biological activities to confirm the most effective solvent and extraction ratio for Nam Daeng.
