Abstract

Chronic kidney disease (CKD) is a significant public health issue, particularly in the southern region of Thailand, where the consumption of strongly flavored food is a prevalent dietary behavior. This developmental research aimed to: 1) synthesize knowledge regarding Southern Thai nutrition and media design; 2) develop a dietary guidebook for CKD prevention tailored for the population in the southern region; and 3) evaluate its efficiency and user satisfaction. The researchers integrated relevant data to create a prototype guidebook entitled “Eat Well, Healthy Kidneys: Southern Edition.” This guidebook presents knowledge about kidney disease, nutrients affecting the kidneys, dietary guidelines, and the nutritional values of local dishes, utilizing illustrations to enhance comprehension. The research findings revealed that the efficiency evaluation conducted by experts in content and media design indicated a good level of appropriateness (mean scores of 4.30 and 4.24, respectively). Meanwhile, the target group's satisfaction with the guidebook was at a very good level (mean score of 4.83). The findings conclude that the guidebook “Eat Well, Healthy Kidneys: Southern Edition” meets the standard criteria for both academic and artistic efficiency and has been well-accepted by actual users. Therefore, it is highly suitable to be utilized as a medium to promote nutritional literacy, raise awareness for behavioral modification, and tangibly reduce the risk of chronic kidney disease among the population in the southern region.
